Lent begins the day after Maslenitsa. Having eaten plenty of pancakes and pancakes, Orthodox Christians remove all prohibited foods out of sight. In 2021, the Fast will last from March 15 to May 1. This time is divided into weeks, which are called Weeks. Food conditions vary these weeks.

But only if you really wanted to. This does not apply to unhealthy foods and drinks. For example, alcohol or fast food.
Lenten menu for 1400-1500: features
Before moving on to developing this diet, I thought about what calorie content to take as a basis. After analyzing all your requests, I concluded that the most popular caloric intake is 1400-1500 kcal. I love this calorie content more than any other:
- not hungry;
- weight loss guaranteed;
- everything happens gently and correctly - extra pounds melt away due to fat;
- With such a calorie content, the body receives all the necessary substances.
The only disadvantage of a lean “weight loss” menu is the insufficient amount of protein, even if the menu is very carefully thought out. There are a lot of opinions on this matter - from “you don’t need that much protein” to “you can get protein from plant foods.” I think it’s clear that on my website I express exactly my opinion.
In my opinion, there are 2 options. The simplest and most rational way is to buy ready-made protein and add it to your diet. Protein shakes are great for snacking, plus you don't have to cook anything. Just make sure it is marked “suitable for vegetarians.” There are many of these on IHerb (I love this store more and more!), here is a link to the selection
The second way out is to completely ignore the issue of protein during fasting. There is not such a serious deficit that any irreversible changes would occur during the fasting period. Of course, if you planned to gain weight during this time, then this will not work. But, however, the caloric intake itself will not suit you for gaining weight.
What you can and cannot eat during Lent - Allowed and prohibited foods by day and week
Many people find this unbearable - eating fruits, vegetables and porridge with water - is it possible to survive on this for so many days?! In fact, the same oatmeal, without milk, can really be tasty. Add jam and honey to it. If this day allows you, you can serve it with a piece of lean bread.
Fasting is an important step on the path to healing the soul before one of the brightest holidays among the Orthodox - Easter. But even clergy do not recommend and sometimes prohibit fasting for children under 14 years of age, pregnant and lactating women, as well as those engaged in heavy physical work. Not to mention those who have digestive problems. Therefore, when preparing for such an important step, consult your doctor first.
The main products allowed during this period are vegetables and fruits. Doesn’t mean you have to nibble only on carrots and apples. They are used as main ingredients in stews, salads, soups, purees and drinks.
Cooking and stewing are allowed on certain days. Oil is also not always acceptable, so fried is excluded. As a last resort, you can brown the food in a dry grill pan.
Fruits, dried fruits, berries and mushrooms are also included in the permitted list. Animal products (milk, eggs, meat) are not allowed. But you can treat yourself to fish if the calendar allows you to do so (we will look at it below).
Most importantly, remember that abstaining from prohibited foods is not everything. At the same time, the main thing is not to “go too far.” There is no point in overeating and pampering yourself with delicacies, even if they are not prohibited.

Hot food is very important. Especially during this period. Soups fill you with energy, vitamins and strength for the whole day. Even without meat and oil they can be delicious. I offer you 3 recipes.
Light vegetable soup
Tasty, bright, appetizing and quite filling. Contains oil. But, if today does not allow you to eat it, you can exclude it from the composition. More details now.
Ingredients:
- Clean water – 2 liters.
- Onions – 70 g.
- Potatoes – 400 g.
- Lavrushka tastes
- Cauliflower – 150 g.
- Black peppercorns - a pinch
- Carrots – 100 g.
- Canned green peas – 120 g.
- Salt - to taste
- A small bunch of greenery
- Vegetable oil – 3 tbsp. if possible
Preparation:
1. Pour water into a pan and place it on the stove. While it is boiling, let's prepare the vegetables.
2. Wash and peel the potatoes. Cut it into small cubes (strips, bars - as usual). When the water boils, send it to the boil.
3. Immediately prepare the carrots. We clean it and cut it into small pieces. A small vegetable can be cut into 4 pieces and then into quarter slices. You can also cut into strips as you wish. We send it to cook after the potatoes. Salt the soup to taste. Cook everything together until the vegetables are half cooked (you can check by piercing a piece of carrot or potato with a knife).
When potatoes are cooked, they contribute to the formation of foam on the surface of the broth. It needs to be removed with a slotted spoon.
4. Cut the cauliflower into neat florets. We send it to cook with half-cooked vegetables.
5. Finely chop the onion. We transfer it to a common pan right behind the cabbage. Cook together for about 5-7 minutes. Now, if vegetable oil is allowed today, you can add it to the soup for richness and brightness. But you can do without it. We also add peas here.
6. Let it boil. Now you can send spices here - bay leaves and peppercorns. Mix and taste. If necessary, you can add more salt. Cook together for another 2 minutes.
7. At the very end, add finely chopped greens, mix, turn off the heat. You can serve immediately or let it brew a little (10 minutes).
Lenten cabbage soup with sauerkraut without meat, simmered in the oven
If you were lucky enough to taste your grandmother's cabbage soup from the oven as a child, then you know how tasty it is. I offer you this option. True, we will bake not in a Russian oven, but in the oven, in a ceramic pot. You can't achieve this taste on the stovetop. The soup is very tasty and satisfying, although it does not contain a single gram of meat.
Ingredients:
- Onions – 1 pc.
- Potatoes – 500 g.
- Carrots – 1 pc.
- Sauerkraut – 700 g.
- Champignons – 500 g.
- Bell pepper – 1 pc.
- Paprika – 0.5 tsp.

Preparation:

4. Heat a little vegetable oil in a frying pan. Here we bring the onion to translucency and softness. Transfer it to a ceramic oven-safe pot.
If you can’t eat oil today, you can immediately put the vegetables in a pot, fresh, or fry them first in a dry frying pan.
5. In the same frying pan, fry the carrots for several minutes. Then add ground paprika and bell pepper. Fry the vegetables until soft. Transfer to a bowl with the onions.
6. Wash the mushrooms and cut them into slices. Fry them until the liquid has completely evaporated and lightly browned. Place in a pot with the rest of the ingredients.
7. Wash the sauerkraut and drain the water. Send in the next layer, following the mushrooms.
8. Peel the potatoes and cut them into strips or cubes. Place on cabbage. Now fill it with clean drinking water. It should cover all products by 2-3 centimeters. Season with salt and pepper to taste.
9. Put it in the oven. Set the heat to 180 degrees. We simmer for 2 hours. Then carefully take out the hot pot, open it, stir the cabbage soup and enjoy the result.
As a result of this cooking method, all pieces retain their shape and integrity.

4. Meanwhile, prepare the main components of the salad. Peel the celery root and carrots. Grate them into one bowl using a Korean carrot grater.
5. Place the vegetables and the previously prepared dressing in one bowl. Mix everything thoroughly. Leave it in this form for about 10 minutes so that all the components of the salad become friends with each other and the vegetables release their juice.
6. Now we decorate a flat plate with lettuce leaves and lay out our salad in a mound. Sprinkle chopped nuts (any kind to your taste) on top.

Fish salad with rice in Lent
I offer you a recipe for a simple, hearty salad. Contains mayonnaise. Don't forget that the classic sauce uses eggs. Therefore, prepare homemade, lean mayonnaise for this dish. Right below this recipe I will give a link to making such a sauce. The salad turns out very elegant, appetizing and tasty.
Ingredients:
- Dry rice – 1 cup
- Lightly salted pink salmon – 250-300 g.
- Leaf lettuce – 50 grams
- Green onions – 50 g.
- Boiled carrots – 150 g.
- A little parsley and sesame for decoration
- Small bunch of dill
- Lenten mayonnaise – 2/3 cup
Preparation:
1. Sort the rice, wash it and put it in a pan for cooking.
2. Cook it in salted water until cooked. Then transfer to a colander, rinse lightly and let all the water drain.
The rice in this dish should not be crumbly. More precisely, on the contrary, it should keep its shape and maintain the stability of the entire salad.
3. Peel the boiled carrots and cut them into small cubes. Transfer to a separate bowl. All other products will also be laid out separately, because the salad is designed in layers.
4. Chop the greens finely.
5. Cut the fish fillet into small cubes.
6. We begin to collect the salad. We will do this in a ring with a diameter of 20 cm. Place the mold on a flat dish. You need to wrap the inside of the ring with film. Place half of the rice in the first layer. Level, slightly compact and grease with a small amount of mayonnaise.
7. Sprinkle with some green onions. We put fish on it. We tear the lettuce leaves into small pieces with our hands and cover the fish with them. Lubricate with mayonnaise.
8. Cover with carrots and then with the remaining rice. Lubricate with the remaining mayonnaise. Cover the top with the film that we previously covered the ring with. Place in the refrigerator for 2-4 hours. You can even leave it until the morning.
9. Now we take it out and remove the ring and film. Decorate the top with dill sprigs, parsley and pieces of fish.

- Carbonated mineral water – 200 ml.

Preparation:

- Wheat flour – 320-330 g.

Preparation:
The dough prepares very quickly. Therefore, we immediately turn on the oven to heat up to 200 degrees.
1. Pour brine and vegetable oil into one bowl. Add granulated sugar and soda. Mix everything.
2. Sift the flour and place it in a common bowl. Next add vanillin. Mix everything. As a result, knead a soft and pliable dough that will not stick to your palms.
Flour comes in different varieties. Therefore, I do not recommend adding everything at once. Leave a little. If it's not enough, you can add more. We monitor the consistency.
3. Roll out the dough into a rectangle, about 1 cm thick. Using a curly or regular knife, cut it into strips, about 1 cm wide. You can now cut them in half, but you can also use long sticks.
4. Line a baking tray with baking paper. We lay out our blanks here at a short distance from each other.
5. Place in an already preheated oven. They bake very quickly. As soon as they are browned, you can take them out. Approximate baking time is 10-20 minutes, depending on the individual characteristics of the oven.

Pies with cabbage on lean dough
Beautiful, appetizing and incredibly tasty pies. Soft dough and juicy filling. They are prepared without milk or eggs. Contains only 4 main ingredients. Find out more now!
Ingredients:
- Flour – 300 g.
- Vegetable oil – 100 ml.
- Water – 100 ml.
- Sauerkraut
Preparation:
1. For the filling we need cabbage. Squeeze it out of the brine.
If your cabbage is too sour, you need to rinse it with cool water, let all the liquid drain, then squeeze it well.
2. Heat enough vegetable oil in a frying pan. When it warms up well, send the prepared cabbage here. Stir until the butter is evenly mixed. Cover with a lid and let simmer for 10 minutes until soft.
3. Mix equal amounts of water and vegetable oil in one bowl (100 ml each). Add flour here and knead into a soft, pliable dough. You don’t need to add salt, because the cabbage will have enough saltiness for the pies. Wrap the soft ball of dough in film and set aside for 15 minutes to rest.
4. Don't forget about cabbage. Stirring occasionally, bring it to readiness. Transfer to a plate and let cool slightly.
5. Divide the resulting dough into approximately 16 equal parts. Roll them into balls. Roll each into the thinnest possible rectangle.
6. Closer to one edge, slightly retreating, place a spoonful of filling. Now we cover the cabbage with this nearest edge, as shown in the photo.
7. Then cover it with two opposite sides.
8. Roll it into a roll. Place the finished products on a baking sheet lined with parchment. Heat the oven to 190 degrees. Bake for 20-25 minutes.

Ingredients:
- Cold water – 1 glass
- Hot water – 1 glass
- Soda – ½ tsp.
- Salt – 1 tsp.
- A little vinegar
- Flour - approximately 1.5 cups
- Vegetable oil – 2 tbsp.
Glasses for measuring products must be the same.
Filling:
- Fresh champignons – 150 g.
- Garlic to taste, optional
- Onions – 1 pc.
- Greens to taste
Homemade granola with peanut butter

We will need:
- Oatmeal – 1 cup;
- Dried fruits and candied fruits – 150 g;
- Nuts – 150 g;
- Seeds – 50 g;
- Coconut flakes – 2 tbsp. l.;
- Peanut butter – 120 g;
- Cocoa – 1 tbsp. l.;
- Salt and spices for flavor - to taste.
First of all, place oatmeal, chopped nuts, seeds and dried fruits, coconut flakes and cocoa into a deep bowl. Add a pinch of salt and add peanut butter. Mix everything until smooth. Place the oatmeal on a baking sheet lined with parchment and dry at 160 degrees for about 15 minutes, stirring occasionally.
Pumpkin cookies

Ingredients:
- Pumpkin pulp – 250 g;
- Sugar – 1/2 cup (or to taste);
- Vegetable oil – 50 ml;
- Flour – 1-1 1/2 cups;
- Soda – 1 pinch;
- Salt and spices for flavor - to taste.
Cut the pumpkin into small cubes and boil until soft. Drain the water and mash the pulp into a puree. Add sugar, soda, salt and spices (cinnamon, vanilla, ginger, etc.). Add sifted flour in small portions. Knead the dough. It shouldn't be too dense. Grease your hands with vegetable oil and form small balls of dough. Place them on a baking sheet lined with parchment. Bake cookies at 180 degrees for 20 minutes until done.
