You will need

  • 1 liver and some lamb entrails (preferably freshly slaughtered)
  • 2/3 large cup olive oil
  • Half a kilo of green onions
  • 3 heads of lettuce

  • 2 eggs
  • 2-3 lemons
  • 1 small cup rice
  • spoon of flour
  • Glass of wine retsina

Clean and rinse the insides very well (with vinegar). Fill with boiling water and cut into small pieces together with the liver.

Heat olive oil in a saucepan and add green onions and dill. You leave them to fry and throw in the entrails and liver. Leave it to cook together - then throw in a spoonful of flour and pour in wine. Pour out 6 cups of water, close the pan. Cook until done - add rice 15 minutes before the end. Before eating αυγοκόβετε - make a sauce from raw eggs, lemon, and broth from the soup. It must be placed before the food itself - and without it, this food has no taste!
